My Friends Are My Family

I may not have many friends, but the ones I have will last me a lifetime. Ever since I was young I never had many friends. I usually had a select few that I would invite over or hang out with at school. Honestly not much has changed. I have never found value in just having "friends" that were more like acquaintances. I always had the ones I knew would last a lifetime and because of that, those friends are now more like family.

All of my friends have also been 100% supportive of my baking and most things that I make from appetizers to desserts. Who could blame them though right? I mean the quickest way to someones heart is through their stomach. Every friend has that one thing they love more than all the rest.

My friend, Diva, specifically loves what I find to be one of the easiest recipes I make, I call them Peanut Butter Fluff Sandwiches, she calls them Heaven. I make them usually at Christmas time to put in my holiday cookie boxes and for special occasions for her especially. Her favorite combo is peanut butter and chocolate. A lover of all thing Reese's as well. I even made her a chocolate and peanut butter cake for her birthday.

This recipe is so popular that I thank my lucky stars it is such an easy recipe. Here it is:


1/2 cup Peanut Butter

1/2 cup Marshmallow creme/fluff

2 sleeves Ritz crackers

1/2 lb Chocolate candy coating

In a small bowl mix the peanut butter and marshmallow creme. Using a knife, spread a small amount onto a cracker and then sandwich it with another cracker. When done spreading onto the crackers I like to chill them for at least 30 minutes. This helps ensure they will not spread or slide everywhere when dipping into the chocolate.

Just before removing the cracker sandwiches from the fridge, melt the chocolate in the microwave as directed.Once it is melted dip the crackers into the chocolate. Here you have free range for as much chocolate as you would like. I personally prefer just a half dip versus a full but to each their own. One dipped place on wax paper and put back in the fridge to set.

Eat at your leisure and remember that one is never enough! You can store in an airtight container in the fridge for up to two weeks.
